老皮嫩肉 Crisp egg Tofu

材料:蛋豆腐2塊

Ingredients: 2 blocks of egg tofu

作法
蛋豆腐先泡水1小時,再切成4cm小塊,把切好的蛋豆腐放在漏勺上

準備170度的油鍋,轉小火,把蛋豆腐放入鍋中,再轉大火,炸到蛋豆腐表面均勻上色,就可以撈起來

搭配柴魚醬油與香菜就可以上桌了

Preparation Method
First, soak the egg tofu in water for 1 hour, then cut into 4cm chunks and place the egg tofu chunks onto a colander.

Preheat a frying pan with oil to 170 degrees. Turn down to a low heat and lower the egg tofu into the pan. Fry the tofu until it has a uniform surface color.

You can finish it off with smoked fish soy sauce and serve topped with cilantro.
